Grateful Fridays.

TGIF! But I'm so glad I have more to thank God for than just because it's Friday.

I'm thankful for...

...that it's time to celebrate my birthday ALL WEEKEND LONG!!! I'm so excited for all the things I have planned :-D

...that Pumpkin is in such an awesome daycare, has wonderful teachers, and all of the things he is learning (in addition to the Christian foundation he's getting)

...that it's PAYDAY!!!

...that my blog is a year old and all of the wonderful people I have met because of it :-)

...that I met my workout goal this week.

...that Camp M.D. 2011 was a HUGE success!!! I always say if I had not chosen medicine, I would be teaching, but I think I still want to try and teach in some way, shape, or form. It was a lot of work, but I am so happy to look back on my experience the past 3 weeks.

Where's the Beef? Grill It Up & Eat It...

"I don't know what beef you guys have between you, but you better grill it up, and eat it" -Drumline




Today's recipe are these bomb.com burgers I made. Saw the recipe on the back of the A1 Steak Sauce bottle:
A1™ Original™ or Zesty Steak Sauce™
lean ground beef
onion, ½ diced, ½ sliced
green pepper, finely diced
egg
hamburger buns, split
tomato slices
lettuce leaves
  • Prepare barbecue or grill (medium-high heat)
  • Mix first 5 ingredients in medium bowl, (except sliced onions)
  • Divide meat mixture into 4 equal portions & flatten each to ½-inch-thick patty; season with salt & pepper, (or eight small burgers)
  • Grill hamburgers until done, brushing with A1 Steak Sauce
  • Place cooked hamburger on grilled bun, top each with a tomato slice, lettuce and onion and bun top.

Serve with extra A1 Steak Sauce.
Serves 4

Kaiser rolls and some fries rounded out this hit. Even little Nate was trying to eat his burger like a big boy :-D

My Blog is a Year Old!






It's my Blogaversary!!!


I cannot believe that it has been a whole year of blogging for me! I have come a long way since my very first post. This is so exciting because never had I imagined how much fun I was going to have blogging and how many awesome new people I would meet...

Where's the Beef?


Today's recipe is one of the easiest dishes to make - Ziti. Below is the McCormick recipe I started with, but I add sautéed zucchini squash and prepared italian sausage to ours...
Little Nate says it's, "Mmm mmm mmm!" Can't argue with that :-)





Baked Ziti is a favorite at potlucks and buffets with good reason -- it's easy, delicious and it travels well.

Makes 12 (1-cup) servings.

Prep Time: 20 minutes

Cook Time: 1 hour 15 minutes

ingredients

Italian Tomato Sauce (recipe link below)

1 package (16 ounces) ziti

1 container (15 ounces) ricotta cheese

1 package (8 ounces) shredded mozzarella cheese (2 cups)

1 egg

2 teaspoons McCormick® Perfect Pinch® Italian Seasoning

1/2 teaspoon salt

1/4 teaspoon McCormick® Black Pepper, Ground

1/4 cup grated Parmesan cheese

directions

1. Prepare Italian Tomato Sauce.

2. Preheat oven to 350°F. Cook pasta as directed on package. Drain and return to saucepot. Gently stir in 1 1/2 cups of the tomato sauce, ricotta cheese, mozzarella cheese, egg, Italian seasoning, garlic powder, salt and pepper until well mixed.

3. Spoon into 13x9-inch baking dish sprayed with no stick cooking spray. Top with additional 1 1/2 cups of the pasta sauce and Parmesan cheese. Cover with foil.

4. Bake 30 minutes or until heated through. Serve with remaining 3 cups tomato sauce or freeze sauce for later use.

Where's the Beef?


So I am definitely NOT the primary chef in the house, but I am getting there - especially thanks to FitMommaV pointing me towards AllRecipes...

This summer I have whipped up some rather tasty dishes. I thought that since I am closing out this week with the Beef Giveaway, it is the perfect time to share some of my favorite beefy recipes...YUM!

Slow Cooker Beef Pot Roast/Stew:
My mom introduced me to this all time fav and it is just as popular in our house as it is in hers...I love it because you can throw everything in the slow cooker in the morning and when everyone gets home from school/work, not only is the aroma of the ultimate comfort food filling the house, but it's ready for you to eat! The extra bonus is that it can disguise veggies and potatoes :cough: picky eaters :cough:

This recipe came from AllRecipes, but I always improvise and end up with something different (what usually happens when I cook lol)

"Cubed meat is mixed with seasoned flour and cooked with vegetables, beef broth, garlic, Worcestershire sauce, and paprika."
INGREDIENTS:
2 pounds beef stew meat, cut into 1 inch
cubes
1/4 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 clove garlic, minced
1 bay leaf
1 teaspoon paprika
1 teaspoon Worcestershire sauce
1 onion, chopped
1 1/2 cups beef broth
3 potatoes, diced
4 carrots, sliced
1 stalk celery, chopped
DIRECTIONS:
1.Place meat in slow cooker. In a small bowl mix together the flour, salt, and pepper; pour over meat, and stir to coat meat with flour mixture. Stir in the garlic, bay leaf, paprika, Worcestershire sauce, onion, beef broth, potatoes, carrots, and celery.
2.Cover, and cook on Low setting for 10 to 12 hours, or on High setting for 4 to 6 hours.

Grateful Fridays.


TGIF! Friday has already started kind of crazy, so I am ready for the weekend! But I'm so glad I have more to thank God for than just because it's Friday.

I'm thankful for...

...another successful week in Camp M.D.

...that little Nate had a smooth transition back to school

...the heat. Yea, it's redic (see photo from the news yesterday), but in 6 months we'll be snowed in, so...

...laughter that makes your face hurt

...being able to watch my son learn new things and grow - his vocabulary is amazing!

...my health and the good health of my friends and family

Coping with the Morning Rush...Again.


So in one of my last non-weekly-themed post, I was talking about the summer program that I am coordinating this summer (Camp M.D. through the office of Diversity Affairs).

Well, the first week wasn't too stressful, I was able to get to my class by 7:30AM each morning, with coffee, and time to get organized before my students arrived for the 8:30AM start.

Now it is week two, my little pumpkin is back from his grandma's and back to daycare. His adjustment to school after a two month break wasn't so bad, but Mommy is having a hard time adjusting to the morning rush of getting he and I ready (note: this summer and oncoming school year, I actually am trying to put a little more daily effort into my appearance too). Although it has been a struggle, I have been able to get us out the door between 7/7:15. Today was our personal best!

By the evenings, I am EXHAUSTED! I planned so many things for my afternoons - working out, getting ahead for class the next day, making phenomenal dinners (I did manage to make some bomb.com ziti and enchiladas this week), etc. Which makes me wonder if "taking the whole summer off" to chill was the best idea, because my M2 year is said to be even worse than M1...eek

This week in camp we:
  • taught the students how to take a complete medical history
  • talked with the dean of admissions for IU School of Medicine
  • discussed health disparities (my favorite issue to drop knowledge on...)
  • took them on a college visit (to the undergrad campus our school sits on)
  • went over the application process for undergraduate and medical school
  • talked with the director of pharmacy for IU Health Systems and toured the hospital pharmacy hub
  • learned about STI research
  • talked with the School of Public Health
  • toured the School of Nursing, and got more information on their program
  • taught the students how to take basic vitals and let them talk to medical students of all years about their experiences
Also, on Monday, everyone was out shadowing doctors all over Indianapolis. I was so excited by the overall response of the students, and so thankful for all of the physicians willing to spend time with them :-D

I'm thankful for...

....safe travels for my pumpkin and that he is having a good time, but also that he is coming home soon!

....a great first week for Camp M.D.!

....going on not one, but TWO, dates with the hubby before the weekend even got here.

....A job, with a paycheck :-)

....summer vacation (I'm REALLY going to miss it! REALLY!)

....that the price for live streaming didn't go up for Netflix too ;-)
